Earth's outer core IS liquid iron-nickel, and its convection — twisted by the planet's rotation (the Coriolis effect) — really does generate the geomagnetic field, the geodynamo. A healthy field really does shield us from the solar wind and cosmic radiation. ‘No magnetic field = very bad’ is true.
But the core won't ‘stop’
and nothing we have could restart it
The core isn't a flywheel you can halt and kick-start. Its convection is driven by the planet's own heat and the slow freezing of the inner core — energies dwarfing anything human. Earth's entire nuclear arsenal is a rounding error against the core's heat content; you cannot ‘restart the spin’ with bombs.

The deepest hole humans have ever drilled — the Kola Superdeep Borehole — reached ~12.3 km. The outer core begins ~2,900 km down: about 236× deeper than we have EVER gone. No vehicle threads magma; the medium is liquid metal at the pressure of a small star's interior.
